Quite simply, Apple packs more pixels, closer together in their screens, be it their notebook screens or Cinema displays. It is especially noticeable when you've got an Apple display sitting next to anything else, like an LG or Dell. Apple displays are orders of magnitude more "fine", and look rather like paper when positioned next to another type of display. You've got to put your nose on the screen to see any amount of space between pixels, while that space is obvious when your 12" or closer to most other displays.
